Fresh and fast

Great salmon in the past – no skin now + mushy texture in recent order
We've ordered many times from Red's, and love it. This last salmon order was a little different. In the dozen times we've ordered salmon, it's always had the skin on. I realize we get a little more for our money this way in terms of weight, but I wonder if it doesn't affect the texture when cooked? I prepared the first fillet just as I always do – really no difference, but at least 2/3rds of the fillet had no firmness to it - no flakes, just mush (despite being cooked to 140F). It tasted fine – still very fresh in flavor. But in my experience, mushiness is a reflection of freezing – either it's been frozen too long, or it's been frozen, thawed, and frozen again. Not sure if the lack of skin has anything to do with any of this, but it's an interesting coincidence. Maybe the second fillet will be better?!? All I know is that my dog misses his regular treat of salmon skin :)
