About This Cut - Toro is found on the belly side of the fish and is prized for its well marbled, high fat content. The belly of a bluefin tuna is what differentiates itself from our other local tuna species. That fat content, which is soft and buttery, is what allows for a unique, culinary experience - different than akami (lean loin meat). Our toro is cut from the highest quality Massachusetts-landed bluefin.
Yield - 1 portion is 3-4 oz. Each saku block yields enough slices to make up to 10 pieces of nigiri or 16 pieces of maki (two uncut maki rolls).
