About This Cut - O-toro is the highest quality part of the bluefin belly and most sought after by fatty tuna lovers. Bluefin tuna will yield a very small amount of o-toro. It has extreme marbling and flavor - truly a unique culinary experience. Found next to kama-toro (very fatty cut closest to the collar) and between regular toro (tuna belly).
Yield - 1 portion is 3-4 oz. Each saku block yields enough slices to make up to 10 pieces of nigiri or 16 pieces of maki (two uncut maki rolls).
