About This Cut - Known as akami, the loin is the leanest cut off the tuna and deep red in color. This is the most commonly found piece of bluefin sushi. Each saku block is carefully cut from the prime loin meat of the tuna.
Yield - 1 portion is 3-4 oz. Each saku block yields enough slices to make up to 10 pieces of nigiri or 16 pieces of maki (two uncut maki rolls).
