Our Blackback Flounder, also known as Winter Flounder, is a classic New England flatfish prized for its mild, clean flavor, subtle sweetness, and tender, flaky texture. Blackback produces thicker, meatier fillets than many other local flounder species while remaining delicate and quick to cook. Wild-caught by local fishermen in the cool waters off Massachusetts, it's an incredibly versatile fish that's perfect for everything from a simple pan sauté to traditional baked stuffed flounder. We recommend 6–8 oz per person.
Thawing & Storage – For the best quality, thaw Blackback Flounder overnight in the refrigerator. Once thawed, keep refrigerated and use within the recommended refrigerated shelf life. The fillets are tender and delicate, so handle them gently when removing them from the package and preparing them for cooking.
Easy Seafood Recipe – Preheat your broiler and place the Blackback Flounder fillets on a lightly oiled baking sheet. Brush with melted butter and fresh lemon juice, then season with kosher salt, black pepper, garlic, and a sprinkle of seasoned breadcrumbs. Broil about 5–6 inches from the heat for 4–6 minutes, depending on thickness, until the top is lightly golden and the fish is opaque and flakes easily. Did You Know? – Blackback Flounder gets its other common name, Winter Flounder (Pseudopleuronectes americanus), from its unusual seasonal migration. During the colder months, adults move from deeper offshore waters into shallow Massachusetts bays and estuaries to spawn during winter and early spring. Peak spawning around Massachusetts Bay and south of Cape Cod generally occurs during February and March. After spawning, most adults return to deeper water as coastal temperatures warm. Blackback is a true New England classic and has historically been considered one of the best-flavored and meatiest of our smaller local flatfish.
