Our New England Grey Sole, also known as Witch Flounder, is a delicate cold-water flatfish prized for its mild, slightly sweet flavor and buttery quality. Its thin, tender fillets have a soft, fine-flaked texture that practically melts in your mouth. Harvested from the deep, cold waters off New England, Grey Sole is an approachable local fish that's perfect for simple preparations that allow its delicate flavor to shine. Thawing & Storage – For the best quality, thaw Grey Sole overnight in the refrigerator. Once thawed, keep refrigerated and use within the recommended refrigerated shelf life. Because Grey Sole fillets are thin and delicate, handle them gently when removing them from the package and preparing them for cooking.

Easy Seafood Recipe – Grey Sole is especially well suited for classic Sole Meunière. Pat the fillets dry and season with kosher salt and black pepper, then lightly dust with flour. Sauté in a hot pan with butter for just 2–3 minutes per side, depending on thickness, until the fish is opaque and flakes easily. Finish with browned butter, fresh lemon juice, and parsley. Grey Sole is also excellent baked, broiled, lightly breaded, or rolled with your favorite seafood stuffing.

Did You Know? – Grey Sole isn't actually a true sole—it's a species of flounder known as Witch Flounder (Glyptocephalus cynoglossus). Unlike many New England flounders that spend part of the year in shallow coastal waters, Grey Sole prefers the cold, deep waters and soft muddy bottoms of the Gulf of Maine, Georges Bank, and the surrounding Northwest Atlantic. It can be harvested throughout the year and is known for producing exceptionally delicate, white fillets with a subtle sweetness and almost buttery eating quality.
