Yellowtail, winter, dab flounder, or sole (depending on the season) are all lean, boneless, flaky, and firm with sweet and mild flavor. These flatfish are easily interchangeable when preparing. 1 portion is approx. 16 oz (1 lb). We recommend 8 oz per person. .
