Dab Sole, also known as American Plaice, is a cold-water flatfish prized for its naturally sweet, subtle flavor and tender, flaky white meat. Its delicate texture and clean sweetness make it an approachable and versatile local fish that's especially good with simple preparations. Wild-caught primarily in the cold, deeper waters of the Gulf of Maine, Dab Sole is excellent fried, baked, broiled, or prepared as classic fish & chips. We recommend 6–8 oz per person.

Thawing & Storage – For the best quality, thaw Dab Sole overnight in the refrigerator. Once thawed, keep refrigerated and use within the recommended refrigerated shelf life. Because the fillets are tender and delicate, handle them gently when removing them from the package and preparing them for cooking.

Easy Seafood Recipe – For New England Fish & Chips, pat the Dab Sole fillets dry and season with kosher salt and black pepper. Lightly dust with flour, dip into your favorite beer batter, and fry in oil heated to 350–375°F for approximately 3–5 minutes, depending on thickness, until crisp and golden and the fish flakes easily. Serve immediately with French fries, tartar sauce, and fresh lemon.

Did You Know? – Dab Sole (Hippoglossoides platessoides) is actually a species of flounder known as American Plaice or American Dab. A true cold-water species, it is found primarily north of Cape Cod in the Gulf of Maine and on Georges Bank, where it lives along the seafloor in deeper offshore waters. Dab has long been appreciated in New England for its naturally sweet flavor and delicate white flesh and is particularly well suited for traditional fried-fish preparations.
