Easy Seafood Recipes - Heat 1 tsp. oil in a large nonstick skillet over medium heat. Season mackerel fillets with salt and pepper. Place in skillet skin side down. Cook for 3 minutes until skin is crisp and flesh is cooked through, approx. 3–4 minutes. Turn fish and cook until flesh is completely cooked through, 30 seconds longer.
